The Ijebu people   in the Southwest of Nigeria are synonymous with the delicacy- Ifokore. When prepared professionally ,it is very delicious.

 

 

The following are the Ingredients:1. Ewura yam(Female Yam),
2.Ground Pepper
3.StockFish
4.Gray Fish
5.Smoke Fish
6.Palm oil
7.Meat
8.Seasoning
9.Salt

 

 

 

 

Preparation:

 

1.Peel the Ewura(FemaleYam) and wash,then grate to form paste.

 

 

2.Put water in the burner or stove and add all the ingredients except the yam paste and palm oil

 

 

3.Let it be cool for few minutes till it is edible

 

 

4.Remove the stockfish and meat from the pot before adding the yam paste and cut it with your hand in form of a bean-cake(akara)

 

 

5.Allow it to be cool together with other ingredients,then add meat, stockfish. Thereafter,stir with spoon for few minutes.

 

6.Finally, add palm oil and turn the yam paste to cook for some minutes . Now remove from the burner or stove and allow it to cool, ready for eating.
